The BEST Protein Monkey Bread

Once you try this recipe you're going to want to eat it for breakfast, and then again for lunch and then again for dessert. It really is that good! This recipe is an awesome, non-meat way to get in some extra protein. It's low on fats too, so you might be obligated to pair it with ice cream or top it with extra butter! Fats get a bad rap, but they're essential for proper hormone production and regulation. The macros are so awesome on this monkey bread, you can have it all JUST FOR YOU! No need to share!


My kids love helping me in the kitchen and baking with scales makes it even more fun. Tori and I had a lot of fun playing around with the ingredients and making it just right. We have two ways you can finish off this recipe, 90 seconds in the microwave or 15 minutes in the oven!


Ingredients:

Needed:

  • Food scale

  • 2 bowls

  • baking/microwave safe dish

  • Fork

  • Oven/Microwave

Steps:

  1. Lightly spray a baking dish with oil. Preheat oven to 350 degrees (if choosing to cook via oven).

  2. Peel banana and place it in a bowl. Mash it with a fork. NOTE: I took a banana from the freezer and microwaved it before adding it to the bowl. This is an option for you if you don't have an overly ripe banana readily available.

  3. Zero the scale, add egg white, mix then set aside.

  4. Mix the dry ingredients together in a bowl (psyllium husk, cinnamon crunch protein powder, cinnamon bun protein powder, bisquick, baking powder, baking soda, pinch of salt).

  5. Pour dry ingredients into bowl with wet ingredients, mix

  6. Let sit for a few minutes (3 ish) to allow the moisture time to fully absorb.

  7. In the now empty dry ingredient bowl add sugar replacement (or real sugar) and cinnamon, mix.

  8. Batter will be a little sticky, drop by the fork-full into the sugar/cinnamon bowl and roll around to cover.

  9. Place in the baking dish you prepared earlier.

  10. Top with dollops of butter.

  11. Drizzle syrup around the top

  12. Bake at 350 degrees for 15-18 minutes in the oven (uncovered if the you want the top crisp and brown or covered if you don't) OR microwave in a larger bowl think you think you need (they expand a LOT!) for 1.5 minutes (microwave time may vary). The biggest difference cooking in the microwave vs the oven is in the microwave, the dough will expand quickly and the deflate quickly leaving a still delicious but flatter, and chewier recipe.

  13. ENJOY delicious, pull apart easily monkey bread!
