Just for ME! Single Serving: GF Protein Waffles

Updated: Jan 13, 2023

CALORIES/MACROS: 328 CALORIES, 32.9g CARBS, 6.3g FAT, 33g PROTEIN

This recipe is for those of us who love carbs and could eat them all day, every day. As a busy adult, it can be easy to put yourself on the backburner. With this recipe, you can have delicious, warm waffles ready in minutes and not feel guilty eating them because they have protein in them too! Why not have waffles for breakfast, lunch, and dinner? I do!

The toppings you can add to your waffles are endless! My favorites are frozen blueberries, butter and syrup but I've also done butterfinger bits (yum!) and peanut butter.

Ingredients:

  • 40 grams of gluten free bisquick (or any other pancake mix works too!)

  • 33 grams of Vanilla Elite Xt Dymatize (this is a casein protein powder. What type of protein powder you use does make a difference. If you use a whey protein powder chances are high they will turn out dry).

  • 1 can (12oz) of sparkling water, lemon or lime flavored preferred. YOU WILL NOT USE THE FULL CAN FOR THIS RECIPE! Only enough to get the batter the right consistency. I forgot to tell a friend this one time, oops! That's why I'm yelling it from the rooftops now.

  • 1 egg

  • Syrup

  • Optional: butter, blueberries, strawberries, whip cream, peanut butter, butterfinger bits.

Step 1: Mix dry ingredients

In a bowl measure out 33g of elite casein protein powder, and 40g of gluten free bisquick.

Step 2: Add in egg

Add 1 egg, mix

Step 3: Add liquid until desired consistency

Slowly pour in the sparking water, little bit by little bit until it reaches the desired consistency.

Step 4: Cook!

Cook the batter in the shape of your favorite waffle. This recipe can also be used to make pancakes if you don't have a waffle maker. Top with your favorite syrup and enjoy!

Enjoy!

I hope you enjoyed making a single serving of protein pancakes with me as much as you enjoyed eating them. Leave a comment and let me know what you think of the recipe!
