I know you love cookies! How about a protein packed cookie that is so simple even kids can make it! Yep, Tori (age 9) loves to make protein cookies for breakfast. No sharing necessary! It's cooked in the microwave so quick, easy and ready in minutes! As an added bonus, no eggs so YOU CAN LICK THE BOWL!
If you love hitting your nutrition goals in delicious ways, definitely add the protein cookie to your tool box. This recipe is a go to when I need to play cleanup at the end of my day and want to do it in delicious ways. It's easy to adjust the main ingredients little bits here and there to hit my number perfectly.
Ingredients:
25g (or 1 scoop) Quest Cinnamon Crunch Protein Powder. It's important to note that a whey, whey blend or vegan protein powder Is best for this recipe.
13g (1 TB) Gluten Free Bisquick
18g (2 TB) Chocolate Chips, I used Libby's in this recipe.
18g (1 TB) Apple Sauce, I borrow from my kids.
16g (1 TB) Peanut butter, I use Skippy Natural Creamy
Slash of water as needed
Materials Needed:
Bowl
Spoon
Paper plate or parchment paper
Microwave
Steps:
Combine Quest Cinnamon Crunch Protein Powder, Gluten Free Bisquick, Apple Sauce and Peanut Butter in a bowl, stir.
If the mixture is too dry, add a splash of water and mix again. You want the consistency of cookie dough.
Add chocolate chips, stir. If you're like Tori and want a beautiful look rather than quick and easy, you have the option of adding the chocolate chips right before the cookie goes in the microwave.
Plop a bit of the cookie onto either a paper plate or parchment paper on plate. This is an important step! It will be easy to peel the cookie up if it was cooked on a paper plate or parchment paper. Note: You have the option of doing 4-5 little cookies in a row and savoring them slowly or doing one big cookie. Cooking time will vary depending on the size of cookie you pick.
Place in the microwave, cook for 30 seconds. Eat and ENJOY! Note: Cooking time may vary based on your microwave and the size of the cookie you're making.
