After living in Asia for 6 years, I really LOVE kimchi! I don’t always like the price of it though. So I decided to learn how to make it myself and save some money. After multiple attempts of online recipe FAILS, I reached out to my friend Takako and asked her if she makes kimchi from scratch and if so, may I have the recipe? She does not, but her mother does! So she sent me the secret recipe.. okay, so it’s not really a secret, it’s a bottle called kimchi base and literally that’s all you need for the most delicious kimchi. I found it for you on amazon, so now no matter where in the world you're living you can make your own DELICIOUS kimchi.
Ingredients:
5lbs Napa Cabbage
1lb carrots
1/2 cup salt
Water
Needed Materials:
Large bowl
Knife
Cutting board
Steps:
1. Chop cabbage in 1 inch pieces, put into a bowl.
2. Julienne carrots, add to the bowl.
3. Add 1/2 cup salt to the bowl.
4. Massage with your hands until the cabbage starts to wilt.
5. Cover cabbage and carrots with cold water (ideally non-chlorinated).
6. Let sit for 2hrs at room temperature.
7. Drain and rinse cabbage and carrots.
8. Remove excess water thoroughly.
9. Add kimchi base to taste, stir.
10. Put in glass jars, cover loosely but allow air to escape!
11. Let sit on the counter for 2 days, periodically poke with a clean chop stick to release air bubbles.
12. Store in fridge when done.
ENJOY!! You can add kimchi to everything! Soups, salads, as a side, etc.
