GF Protein Waffles - Kid Tested and Approved!

This recipe was inspired by my children. I wanted a higher protein breakfast that was just like the pancakes/waffles I grew up with as a child. I have since shared this recipe with numerous friends, and it's always a hit! I hope you and your family enjoy it as much as we do.


GF Protein Waffles - Kid Tested and Approved!


Ingredients:

  • 2 eggs

  • 170 grams (about 1.5 cups) of gluten free bisquick (or any other pancake mix works too!)

  • 90 grams (about 3/4 cup) of Vanilla Elite Xt Dymatize (this is a casein protein powder. What type of protein powder you use does make a difference. If you use a whey protein powder chances are high they will turn out dry).

  • 1 or 2 cans (12oz) of sparkling water, lemon or lime flavored preferred.


Directions:

  1. Warm up the waffle iron or pan (this same recipe can make pancakes instead of waffles).

  2. In a large bowl measure out 170 grams of gluten free bisquick (about 1.5 cups) and 90 grams of Vanilla Elite Xt Dymatize (about 3/4 cup).

  3. Add two eggs

  4. Pour in sparkling water and mix until the batter reaches the desired consistency (should look like waffle batter). I generally use 1.25 -1.5 cans, though I prefer my batter pretty thick so I can pick it up easily on the spatula to put on the waffle iron.

  5. Put batter in the waffle iron, close and let cook. Open when the light changes color, roughly 2 minutes (or follow your waffle irons directions).

  6. Serve them right after or store them in a ziplock bag in the fridge or freezer. Toaster preferred for reheating them.


Enjoy! This recipe has been priceless while traveling! You can easily bring a waffle iron to a hotel and make your family a healthy, delicious breakfast before you head out adventuring for the day. The waffles can also be used as the "bread" in a sandwich to make egg/cheese sandwiches or peanut butter and jelly sandwiches for on the go lunches or breakfasts.
