GF Protein Apple Eggnog Cobbler

Apples, eggnog, vanilla, OH MY! This warm, delicious apple cobbler will hit the spot and better yet, it takes only minutes to make AND doesn't break the calorie budget! I don't know about you, but I hate to waste food. So when the apples were starting to go bad, I peeled, chopped and froze them for later. This is one my favorite ways to use up frozen apples, but it works just as well with fresh apples.


This is a single serving recipe. You don't have to share! It makes a great breakfast, lunch or snack and whips up quickly and easily (5 minutes!).


GF Protein Apple Cobbler


Ingredients

  • 155 grams of fresh or frozen apples, peeled and diced.

  • 15 grams (about 1 TB) of gluten free Bisquick (or any other pancake mix works too!)

  • 20 grams (about 2 TB) of Vanilla Elite Xt Dymatize (this is a casein protein powder. What type of protein powder you use does make a difference. If you use a whey protein powder chances are high it will turn out dry).

  • 80 ml Eggnog (I used Lactaid, but any will work. Note: using a different eggnog will change the macros)

  • Cinnamon, to taste

You'll also need:

  • 2 bowls (one of them microwave safe)

  • food scale or measuring spoons

  • spatula or spoon to mix


Directions

  1. In a microwave safe bowl, add 155g of peeled, diced apples. Sprinkle with cinnamon and place in the microwave to cook, uncovered for 2 minutes. While it's cooking, move to the next step.

  2. Measure out 15g of GF Bisquick and 20g of Elite dymatize vanilla casein protein powder.

  3. Add in 80ml of Eggnog and mix.

  4. When the apples are done cooking, gently pour off any excess water.

  5. Spoon the batter on top of the apples by dropping it on top of the apples. This batter can be eaten without microwaving, so licking the spoon and the bowl is encouraged.

  6. Cook in the microwave for 1 minute, 20 seconds (your microwave time may vary. Start with 30 or 60 seconds and check on it).

  7. Sprinkle with cinnamon and ENJOY!
