Blueberry Protein Cheesecake

CALORIES/MACROS: 285 CALORIES, 32.7g CARBS, 2.8g FAT, 30.7g PROTEIN


I cannot write this recipe without giving a shout out to Stephanie Hostetler, one of my First In Nutrition Family Members. Stephanie shared a version of this recipe with me back in 2021 and I've been making delicious variations ever since!



This recipe is PERFECT for making a decadent cheesecake that’s high in protein and doesn’t have the sugar laden calorie punch regular cheesecake comes with. As an added plus, no need to share. It can be ALL JUST FOR ME!



Ingredients:

150g (1.5 cup) fresh or frozen blueberries

1 Salted Caramel Fairlife Protein Drink

23g Jello Sugar Free Instant Cheesecake Pudding or if you're like me and prefer to buy in bulk when you can Jello Sugar Free Instant Cheesecake


Needed:

-Sealable container

-Hand mixer or milk frother


Steps:

  1. Weigh out 23g of sugar free cheesecake jello pudding

  2. Pour in 1 salted caramel fairlife protein drink

  3. Mix with a milk frother or hand mixer

  4. Cover and put it in the fridge for a few hours to let it set.

  5. Top with 200g of blueberries and ENJOY!


This is the same recipe but with frozen blueberries. I like to pour the frozen berries on the cheesecake and then let it sit out while I put the kids to bed, so I can enjoy it as a late night snack.
